Chocolate Cherry Pancakes Recipe

Many athletes will drink tart cherry juice after a workout, to help relieve exercise-induced muscle pain, damage, and inflammation.

These Chocolate Cherry Pancakes are not only a great weekend breakfast option, but perfect for a post workout snack. They can be made ahead of time, so they’re ready to grab, when you’re on the go!

Chocolate Cherry Pancakes Recipe

(serving size: 1)

Ingredients:

1 egg
2 tbsp Greek yogurt
½ cup oat flour
1 tsp honey
½ tsp baking soda
1 tsp vanilla extract
2 tsp cacao powder
¼ cup cherries, pitted and chopped
1 tbsp coconut oil

Directions:

1) Heat coconut oil in a medium non-stick skillet.

2) Combine all ingredients into a large bowl, except cherries, and whisk or blend.

3) Pour the mixture onto the heated skillet forming small pancakes.

4) Top the pancake with cherries while cooking.

5) Flip pancake and cook other side.

6) Enjoy!
