Healthy 4-Ingredient Breakfast Cookies

Cookies for breakfast? Absolutely When you’re tired of avocado toast, these breakfast cookies will help start your day off right!! They are so easy to throw together, and a great make-ahead option for when you’re on-the-go!

One of the main ingredients in these breakfast cookies are OATS. A popular breakfast option for years, oats are a good source of sustenance, and come with a handful of wonderful health benefits.

Oats are a gluten-free whole grain, and have been known to be one of the healthiest and nutrient-dense foods you can eat!

A great source of vitamins, minerals, fibre and antioxidants, studies show that oats have many health benefits; including weight loss, lower blood sugar levels and a reduced risk of heart disease.

Healthy, easy and delicious, this breakfast cookie recipe can be made ahead of time and frozen.

BONUS TIP: Pre-package them in ziplock bags, so super easy to grab them out of the freezer when you’re rushing out the door or on-the-go.

Breakfast Cookie topped with Almond Flour Crumble and Sugar-free Glaze Recipe

Cookie Ingredients
½ cup peanut butter
2 large bananas mashed
2 cups oats
½ cup blueberries

Crumble Ingredients
½ cup almond flour
½ cup coconut flour
2 tbsp coconut sugar
2 tbsp melted coconut oil
¼ tsp vanilla
2 tbsp maple syrup

Glaze Ingredients (optional)
½ cup sugar free powdered sugar
2 tbsp coconut milk

Instructions

1) Preheat oven to 350F. Line a baking pan with parchment paper

2) Place all cookie ingredients in a bowl and mix together and transfer to baking pan

3) Place all crumble ingredients in a bowl and mix together and sprinkle on top of cookies

4) Bake cookies topped with crumble for 16 minutes

5) Let cool then drizzle with glaze
