Mango Basil Shrimp Recipe
1/2 pound raw shrimp, peeled & deveined
2 tablespoons olive oil
1 large mango, cubed
1/4 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 cup basil, chopped
1) Toss shrimp with salt, 1 tablespoon of olive oil and cayenne in a small bowl. Refrigerate for 20-30 minutes.
2) Heat 1 tablespoon of olive oil in a skillet over medium heat. Place the shrimp on the skillet and cook for approx. 1-2 minutes per side.
3) Add mango & basil and sauté for another minute or so.
4) Serve warm!
