Healthy Kale Summer Salad

Summer salads are a great way to use delicious in-season fruits and vegetables. 

And, there are plenty of benefits to swapping out your usual iceberg lettuce for kale. 

Kale is one of the most nutrient-dense foods on the planet.  The bright green leaves are loaded with antioxidants, are an excellent source of vitamin C, and they contain an abundance of good fats, protein and fibre. It’s a true SUPERFOOD.

One cup of kale has just 33 calories, nearly 3 grams of protein and 2.5 grams of fibre, and is an excellent digestive support.

This salad recipe is perfect for summer BBQ’s, and easy family dinners.  It will be sure to impress even those kale-salad haters among the group.

Kale Summer Salad Recipe

For the Dressing

½ cup fresh blueberries
¼ cup balsamic vinegar
1 tbsp raw honey
2 tsp Dijon mustard
6 tbsp EVOO
¼ tsp Salt
¼ tsp Pepper 

Instructions

Put all ingredients for the dressing in a Magic Bullet or Vitamix and blend until smooth.

For the Salad Combine

6 cups Kale
1 cup Grape tomatoes
¼ cup Sliced almonds
¾ cup Fresh blueberries
½ cup Crumbled Goat cheese

The amount for the above can be decided based on how many people you are making the salad for. You can toss or drizzle the dressing on just before serving, or leave it on the side for people to add themselves. 

BONUS TIP: Make it a full meal by adding chicken, shrimp or salmon.
