Parsnip Chips: A Delicious Salty Snack

Sometimes there’s no denying the desire for a handful (or bag) of potato chips. While potato chips are delicious, a bag of chips could cost you over 1,000 calories!

So next time you have a craving for a salty snack, why not try parsnip chips. They’re easy to make, have healthy benefits, and, they will satisfy your salty craving!

What is a Parsnip?

Often overlooked, parsnips are a delicious and nutritious vegetable option. Parsnips are a root vegetable, closely related to carrots and parsley root.  They have a stronger and spicier taste compared to the carrot.

Parsnips are a good source of vitamin C, potassium and folate, and are high in fibre. A one cup serving of raw parsnips has just 100 calories, 17 grams of net carbs and 6 grams of fibre.

Parsnip Chip Recipe

These parsnip chips are so easy to make and are a great snack option! Or, why not try swapping potato chips with these parsnip chips, as a side to your favourite burger at your next BBQ.

Ingredients

1 tbsp EVOO or Avocado Oil
2 parsnips, peeled into ribbons
½ tsp Salt
¼ tsp Pepper

Instructions

  1. Preheat oven to 350F. Line a baking pan with parchment paper
  2. Toss peeled parsnip ribbons in bowl with oil. Add salt and pepper  
  3. Place onto baking pan and bake for 20-25 minutes or until they turn a nice golden brown colour.

Bonus Tip: Turn them after 10 minutes of baking to prevent them from getting soggy.
