Crockpot Veggie and Lentil Stew Recipe

After a long day, ordering from UberEats, or picking up from a fast food chain, may seem like a good idea; however, doing this up to 3 times a week – or more –  will not only impact your wallet, it will impact your waistline too!

This is where a crock pot comes in handy. If you don’t already own one, maybe it’s time. It will help to simplify your life; plus, crockpot meals will save you time and money as well!!

With minimal prep time (usually 15 minutes or less), you can leave the house while the food cooks! And there’s nothing like coming home to a home cooked meal that’s ready to eat!

If your mornings are too hectic to do the prep work, you can try the ‘night-before technique’. Toss everything into the pot, to cook, before you go to bed! When you wake, transfer the cooked meal to a plastic container, let it cool to room temperature while you shower, then refrigerate. The flavors will intensify…so it will taste even better when you reheat it that evening.

Crockpot Veggie and Lentil Stew Recipe

(serving size: 4)

Ingredients:

1 large sweet potato, cubed
2 carrots, sliced
½ cup sweet onion
1 stalk celery, sliced
1 cup strained tomatoes
2 cups vegetable broth
1 cup dry lentils
½ teaspoon paprika
1 teaspoon pepper
Dash of sea salt

Directions:

1) Add sweet potatoes, carrots, onions, celery, tomatoes, vegetable broth and spices to a slow cooker. Cook on low for 8 hours.

2) Add lentils in the last hour of cooking time.
