Recipe of the Week: Stuffed Acorn Squash

Acorn Squash Stuffed with Turkey and Apple

Cut acorn squash in half and cut ends off. Drizzle with avocado oil and salt and pepper.

Bake at 400 for 40 minutes.

To prepare the filling cook:
1 tbsp evoo
1 onion
2 stalks celery
1 tsp salt, pepper and fresh rosemary
1/2 lb lean ground turkey

Once the above is cooked add in:
1 apple
1 cup Panko breadcrumbs
1/2 cup parmesan cheese

Spoon mixture into centre of cooked Acorn squash and return to oven and bake for 15-20 minutes. Enjoy!!
