Recipe of the Week: Apple Fennel Salad

Not your every day salad! This mix of apple and fennel will surprise your taste buds as the combination of tart apples and liquorice fennel is one that will not be overlooked! In my opinion this is one of the freshest tasting and bright summer salads I have ever made. Enjoy!

Ingredients

• 1 large fennel bulb, cut into 3 inch match sticks
• 2 granny smith apples, cut into 3 inch match sticks
• Juice and zest of 1 lemon
• 2 tablespoons olive oil
• 1 tablespoon fresh thyme
• Salt and pepper to taste
• ½ cup chopped walnuts

Instructions

1. Add every ingredients to a bowl (except walnuts) and mix until all ingredients are well coated.
2. Let marinate in the fridge for 4 hours.
3. When ready to serve top with chopped walnuts.
